Mouthfuls of spring (at the end of winter)

Sweet, crunchy pea shoots mean feeling the salad-love, even though it’s still only February.

Pea seeds are the same little chaps you can buy in supermarket bags for dhals and soups – dried wrinkled peas from last year’s pods. But they’re much more healthy and delicious pushed into compost and snipped as green shoots into bright winter salads.

Push single peas down to a finger’s depth in any compost. The seeds can be pushed in quite close together for lots of pea shoots. Water, window sill, then cut the shoots into the salad bowl in less than 14 days.

Vitamin C, A, and high in protein. Launch a stealth attack on winter.
