DO SUGARED CHERRY BLOSSOMS . Hanami is the centuries old Japanese practice of picnicking under a blossoming sakura, or cherry tree, and celebrating the beauty of the blossom. We’re honouring springtime by adding these sweet, sugared blossoms to heavenly spring and cakes.

Kit:

cherry blossoms

an egg

one tablespoon of caster sugar

water   image Pick a blossoming sprig from a cherry tree, and stand it in a pot of water to keep the flowers fresh.

Separate the egg white from the yolk, and whisk it lightly until frothy.

Pick individual flowers from the blossom branch and using the paintbrush, coat them throughly in the whisked egg white.

Leave the stem on at this stage to make handling easier.

Scatter sugar over the flower and place on parchment paper to dry overnight. Carefully peel away the paper and snip off the stem.

Sweet.
